Canned Blue Swim Crab Meat

Products are packed in 16 oz / 1 lb (454 g) tin cans or plastic cups and pasteurised to meet the standard requirements for a ready-to-eat product. They are stored in chilled conditions, maintaining a temperature of −1.0 °C to 3.0 °C.

Six grades are available. Quantity / count per can or cup, and top-and-bottom setting percentages, can be adjusted to buyer requirements.

Grades Available
1. Colossal Unbroken pieces of meat picked from the swimming-leg chambers of the crab (maximum two pieces per crab). 30–50 pieces per lb (454 g); approx. 40 pieces per 16 oz can/cup. No mustard or crab roe allowed.
2. Jumbo Lump Unbroken pieces of meat picked from the swimming-leg chambers of the crab (maximum two pieces per crab). 70–100 pieces per lb (454 g); approx. 85 pieces per 16 oz can/cup. No mustard or crab roe allowed.
3. Super Lump Broken chunks of Colossal and Jumbo Lump crab meat plus chunky flower lump of white body meat. Pieces greater than 1 g, with up to 5% tolerance under 1 g. Super Lump (>1 g) is “sandwiched” between 20% dressing (10% top, 10% bottom). Dressing may be large flower lump with 2–3 petite Jumbo pieces, all petite Jumbo pieces, or 2 g Jumbo/Colossal broken pieces with 2–3 petite Jumbo pieces.
4. Lump A blend of a higher percentage of mixed Lump and a lower percentage of Special meat (blend ratio per buyer requirement). Lump is a blend of Super Lump, flower lump, and medium pieces of lump meat from around the body of the crab. Pieces between 0.5 g and 1 g. Special is small pieces from the smaller body cavities (≤0.5 g).
5. Special 100% Special meat: small flakes of white crab meat taken from the body cavity, defined as ≤0.5 g, or pieces that sift smaller than a 5 mm screen.
6. Claw 100% natural assortment of all claw, walking-leg, and swimming-leg meat (from appendages); whole merus pieces mixed with broken merus and leg meat. Whole merus or carpus pieces are placed on the top and bottom of each can to cover a minimum of 75% of the top and bottom surfaces.
